As a general guideline, foods can be classified as
easy to cook
medium to cook
hard to cook
The normal amount of water and seasoning is added to dried grains and
beans. No water is added to fresh vegetables, such as carrots, potatoes,
beets and squash.

Easy to Cook
General cooking time = 2 hours
white rice, millet, maize, barley, squash, chicken and fish.

Medium to Cook
General cooking time = 3 hours
potatoes, lentils, brown rice, blackeyed beans, large amounts of the
easy to cook foods.
*******************************************
Hard to Cook
General cooking time = 4-5 hours
red beans, black beans, kidney beans, split green peas, large amounts of medium to cook foods.
